Prepare a lot at once: they will ask for more! A really simple and tasty recipe, without mayonnaise or exotic ingredients. At the same time, it is worthy of a festive table for a family celebration.

We need:

  • Herring (lightly salted) - 1 small
  • Red onion (aka Crimean, salad) - 1 onion
  • Eggs (boiled) - 4 pcs.
  • Lettuce leaves - 1 large bunch

For the sauce:

  • Mustard (Dijon) - 1 teaspoon
  • Olive oil - 3 tbsp. spoons
  • Lemon juice - 1 teaspoon
  • Salt - to taste

What are we doing.

We arrange the ingredients in a chaotic manner and pour the original dressing on top.

The base is lettuce leaves torn into pieces. Don't forget to wash and dry them first. If the leaves have already wilted, immerse them in very cold water for 20 minutes.

  • Eggs in large slices
  • Thinly sliced ​​onion in half or quarter rings
  • Fish. We will chop it (also quite coarsely) or cut it (in long thin strips)

Mixing the ingredients of the sauce takes just half a minute! - and pour it over the dish immediately before serving.

And this option is already approaching the ceremonial treat. There are no difficulties in cooking! Just put the individual components on top of each other - and enjoy the taste by leaving it in the refrigerator for up to 30 minutes.

We need:

  • Herring (lightly salted) - 1 small
  • White onion - 1 large head (up to 150 g)
  • Apple (sweet and sour) - 1 whole (to taste up to 150 g)
  • Potatoes (boiled, in peel) - 3 pcs. average
  • Eggs (boiled) - 2-3 pcs.
  • Carrots (boiled) - 2 pcs.
  • Vegetable oil - 3 tbsp. spoons
  • Light mayonnaise - up to 6 tbsp. spoons
  • Salt - to taste

How to cook.

We cut the carcass and finely chop the fish pulp.

Chop the onion into thin half rings and choose one of three options to taste:

  1. No preparation at all.
  2. Marinate by adding vinegar (3 parts) and sugar (2 parts) to the slices, add a little salt. Leave for 20-30 minutes. Afterwards we drain the juice, and put the onion into action.
  3. Fry until softened and lightly golden. Place on a napkin to cool to absorb excess oil.

Potatoes, apples, carrots and eggs can be grated while layering, holding the grater suspended.

On a wide serving plate we place a salad ring or the edge of a springform baking dish. Peel and grate the potatoes - the base of the salad. Next comes mayonnaise. The herring will live on the second floor, and the grated apple on the third. Mayonnaise again, which will prevent the apple from darkening.

For the fourth layer - prepared onions.

Grated carrots will go fifth, followed by mayonnaise if desired. The sixth are crushed whites, and the seventh are yolks. Decorate with a feather of greenery and refrigerate for at least 15 minutes.

Another serving option for puff salads is to place them in a container and turn them over. We place cling film on the bottom of a suitable bowl, and on top of these layers in reverse order. Turn over onto a large plate, remove the film and sprinkle with chopped herbs.

Recipe with herring and Korean carrots

Those who love savory dishes should look east. It turns out that herring can also be prepared in the Korean style.

We need:

  • Lightly salted herring fillet - 1 piece (300 g)
  • Korean carrots - 200 g
  • Bell pepper - 1 pc.
  • White onion - 1 medium onion
  • Parsley (greens) - to taste

  • Soy sauce - 1 tbsp. spoon

Rich, traditional and inexpensive, but a simple and tasty example, including for the holiday table. There will be everything: mayonnaise and pickled cucumber!

We need:

  • Herring fillet (lightly salted) - 400-500 g (2 fish)
  • Boiled potatoes - 1 pc. large (100 g)
  • Boiled carrots - 2 pcs. (150 g)
  • Apple (sour variety) - 1 pc. medium (100 g)
  • White onion - 1 pc. (up to 100 g)
  • Pickled cucumbers - 2 pcs. (up to 100 g)

For the sauce:

  • Mayonnaise - 8 tbsp. spoons
  • Apple cider vinegar (6%) - 1 tbsp. spoon
  • Mustard (medium, ready) - 2 teaspoons
  • Salt - ½ teaspoon
  • Ground black pepper - 1 teaspoon

Preparation.

We will evaluate the products and prepare them if necessary.

  • If the cucumbers are barrel cucumbers with very hard skins, first peel them.
  • If the fillet is too salty, soak it in milk for one hour, rinse in water and dry with napkins.

We cut into small cubes, as for Olivier: potatoes, carrots, peeled apples, herring fillets and pickles. Finely chop the onion.

Combine the cuts and mix.

All that remains is to prepare the sauce. Combine all ingredients and beat with a fork. Pour over salad mixture.

Salad with herring and mushrooms “Fox coat”

A little effort and you will serve a very impressive dish on the festive table. Two features of this recipe “under a fur coat”: decorating the top layer with carrots and a unique combination of fish and mushrooms. It would seem that the ingredients are completely different, but they perfectly emphasize each other’s taste.

  • Herring (medium salted) - 1 pc.
  • Carrot (large) - 1 pc.
  • Potatoes - 3 pcs.
  • Mushrooms (we have champignons) - 300 g
  • Onion - 1 small onion
  • Eggs - 3 pcs.
  • Mayonnaise - 6-8 tbsp. spoons
  • Oil - for frying
  • Salt - to taste

We start behind the stove. Boil eggs, carrots and potatoes, let them cool, peel and chop. It's best to use a coarse grater.

Chop the onion and champignons into smaller pieces and throw them into the frying pan. Fry until an appetizing golden hue appears. If you don’t want to bother with frying, we immediately take pickled mushrooms.

It's time to lay out the layers. Each layer is thinly greased with mayonnaise. You can make gaps from the coating to taste.

“Simple” with beets and potatoes

Ingredients:

  • Herring (lightly salted, fillet) - 200 g
  • Beetroot (medium) - 2 pcs.
  • Potatoes - 3 tubers
  • Onion - 1 pc.
  • Oil (preferably olive) - 3 tbsp. spoons
  • Lemon juice, pepper - to taste

Preparation.

Boil the beets and potatoes or bake them in the oven (in foil - it’s even tastier!). Let cool and remove the peel. Chop all the ingredients into cubes of the same size, mix, add butter. Fans of spice and sourness do not forget about pepper and lemon. That's all!

The best ideas - five more salads!

We just make a salad without potatoes. Or, removing the root vegetable, add an apple. And we’ll prepare a compound dressing. Shake the oil (3 tablespoons) and equal parts sweet mustard and lemon juice (1 tablespoon each). You can also add honey to taste (1 teaspoon is enough for us). It seems like nothing exotic, but the taste is completely different - bright and unusual!

We add one additional component to the slices - canned corn, peas or beans. Take a plump red one, 2-3 tbsp. spoons.

And here’s the most unexpected, delicious addition: cubes of peeled tomato or sweet red pepper. Take the time to pour boiling water over the vegetables for a couple of minutes and remove the skins. Solid pulp feels much juicier, and salads with it are more luxurious.

By the way, you should cut only the dense flesh of peeled tomatoes, and put the liquid inner part into a mash sauce - paired with lemon juice.

“Even easier!” with green peas

It’s done in ten minutes and eaten in five. :)

We need:

  • Herring - 250 g
  • Boiled potatoes - 1 pc.
  • Peas (canned or frozen) - 100 g
  • Onion (preferably red sweet) - 1 pc.
  • Dill - 1 tbsp. spoon (finely chop)
  • Olive oil - 2 tbsp. spoons
  • Lemon juice - 1 tbsp. spoon
  • To taste: salt, ground black pepper

How we cook.

Cut the potatoes into short strips. We also chop the herring fillet to its size. Let's connect.

Cut the onion into quarters or half rings and pour in lemon juice. Let it sit for a couple of minutes, fluff up the slices and combine with the other two ingredients. Add dill, peas, oil. Salt and pepper to taste.

To ensure that potatoes are always easy to cut, boil them the day before or at least the evening before.

With rice, carrots and cucumbers

Compositions with rice take longer to take root in our family, but this cute set is simple and tasty. It is unlikely that it will replace Olivier on the holiday table, but it can act as a hearty set for an extended family dinner.

We need:

  • Herring fillet (lightly salted) - 500 g
  • Onions - 1-2 pcs. (up to 120 g)
  • Carrots - 1-2 pcs. large (up to 150 g)
  • Fresh cucumber - 2-3 pcs. (10-12 cm in length)
  • Rice (boiled) - 120-130 g
  • Dill (finely chopped) - 2 tbsp. spoons
  • Lemon juice - 2 tbsp. spoons (optional, for love of sourness)
  • Mayonnaise - to taste: we use up to 3 tbsp. spoons
  • Salt, pepper - to taste
  • Lettuce leaves - 4-5 pcs. (for serving on a liner)
  • Vegetable oil - for frying

Important details.

  • If you absolutely do not like rice, replace it with the same amount of cold boiled potatoes, coarsely grated.

How to cook.

Boil the rice and let it cool. We clean the carrots, chop them onto a coarse grater and saute them in a frying pan - just until they soften, we don’t want a fried crust. Carefully place on a napkin to absorb excess oil.

Cut the onion into thin quarter rings, lightly pepper and pour in lemon juice for 5-7 minutes.

Cut the boneless herring fillet into small cubes. Chop the cucumber into thin short strips. It makes sense not to peel: it’s prettier and has more crunch. Chop the dill as finely as possible and combine with the cucumber slices.

We lay a simple ensemble in layers:

  • Lettuce leaves - Rice + a pinch of salt + a thin layer of mayonnaise - Fish - Pickled onions (drain the lemon juice!) - Carrots - A thin layer of mayonnaise - A mixture of cucumbers and dill

Let the layered beauty steep for a short time - one hour in the refrigerator. Before serving, add some salt on top to make the cucumbers even tastier.

On a note!

The dish will also work well with canned food. Choose pink salmon or sardines in their own juice. This is a “quick mimosa” with rice.

With herring and avocado “Bold Chic”

They try it with caution... And ask for more! This is the constant fate of this original set of products in a spicy salad without mayonnaise. To our taste, it also suits a holiday meal.

We need:

  • Avocado - 1 pc. (the average size)
  • Lightly salted herring fillet - 150-200 g
  • Cucumber (fresh) - 1 pc. (large)
  • Chicken egg - 1 pc. + 1 yolk for sauce
  • Apple (sweet and sour) - 1 pc. (small, peeled)
  • Boiled rice - 3 tbsp. spoons (can be replaced with potatoes)
  • Mustard (sweet) - 1-2 tbsp. spoons
  • Vegetable oil - equal to mustard
  • Dill or green onions - optional
  • Salt and black pepper - to taste

Preparation.

Cut all ingredients into small cubes. We take the greens without fanaticism and chop them finely. Make the sauce: mash one boiled yolk thoroughly with a fork and mix with mustard - without lumps. Add oil and mix until smooth texture. We fill the motley mass of chopped ingredients. Bold chic is ready!

There are different recipes for herring salads. The most common, perhaps, is herring under a fur coat. But not long ago I discovered (or rather, I was treated to) a very tasty salad with herring and boiled potatoes. Comrades, believe me, it’s very tasty and satisfying! This salad is a little boring in terms of colors, but adding boiled carrots, and in large quantities, makes the salad play with bright colors and makes it more attractive and tastier.

Potato salad with herring can easily be served on a holiday table, especially since the New Year and Christmas holidays are just around the corner.

To ensure that you do not end up with porridge or mashed potatoes, choose the right type of potato that does not overcook, or undercook the potatoes a little, so they will retain their shape and will not crumble. There is also one little trick: when boiling potatoes, you can add a little citric acid or a few drops of lemon juice to the water. Thanks to this technique, the potatoes do not become overcooked, and the tubers retain their shape well.

To prepare potato salad and pickled herring you will need fairly simple and affordable ingredients.

Ingredients:

  • Boiled potatoes 8 - 9 pieces (medium size),
  • Salted or pickled herring 2 - 3 pieces,
  • Boiled carrots 5 - 6 medium root vegetables,
  • Onions – 3 heads (medium),
  • Adygean salt – 1.5 tbsp. spoons,
  • Fresh parsley - 1 bunch,
  • Unrefined vegetable oil,
  • Ground black pepper to taste.

Cooking process:

First, boil the carrots and jacket potatoes. You can boil vegetables for salad not only using a gas stove, but also cook them in a slow cooker or microwave. Boiled vegetables need to be cooled and then peeled. While the vegetables are cooking, we will peel onions and herring for the salad. This time we had spicy-salted herring, very aromatic, just lick your fingers (I’m doing this to make you salivate even more).

The cleaned herring fillet should be cut into small cubes.

Chop the boiled and peeled carrots into small cubes.

Do the same with potatoes.

Now it’s the turn of the onions; they should be finely chopped. For those who do not like the pungent smell and bitter taste of onions, I recommend pouring boiling water over them after slicing and leaving for 10 minutes. We do not do such manipulations, since we all respect raw onions.

Fresh parsley should be thoroughly washed and chopped not too finely.

We used Adyghe salt for the salad. I discovered it for the first time and I really liked it. This is a wonderful “union” of coarse salt, aromatic herbs, dried garlic, coriander, and savory. I’ve already read that you can prepare such delicious aromatic salt yourself at home, so I’ll take a risk and cook it somehow, and if it works out, I’ll share it with the swami. So now I will cook all my dishes exclusively with this salt. Of course, the exception will be dough and other sweet baked goods that contain salt.

Take one medium carcass of lightly salted Norwegian herring. Peel it and remove seeds, as in the video above, and chop the pulp finely.

Now prepare the onions. Chop a large onion into thin half rings, as in the photo.


Over low heat, sauté the onion in vegetable oil until translucent and light golden brown. Do not fry too much, otherwise it will be bitter. If you don't like the taste of fried onions, add them fresh. A even better - pre-marinate in apple cider vinegar with a pinch of sugar.


Prepare a wide, flat serving plate to serve on. Place a metal serving ring in the center.

If there is no such ring, you can do it differently. In this case, lay out all layers of salad in the reverse order. Take a round bowl with straight sides and line it with cling film. Form the salad into layers in a bowl, and then turn this container upside down onto a flat plate. After you remove the bowl with the film, the neatly arranged snack will remain on the plate. Just don't forget to decorate it on top.




Grated boiled potatoes will be the first layer, place them in the ring.


Coat all layers well with mayonnaise.


Pieces of herring go in the second layer.


Add the grated apple to the ring and immediately cover it with mayonnaise so that it does not darken.


Another layer will be golden onions; first place them in a sieve to remove excess oil. Place grated carrots on the onion, don’t forget about mayonnaise.


Make the final layer of grated whites and yolks.


The herring salad is ready, now you can remove the ring from it and serve.

If desired, you can decorate the top of the salad with a sprig of fresh herbs.

Also clean the herring, separate the fillets from the bones and cut into small slices.

Remove the onion from the marinade and leave it to drain. Mix all prepared ingredients in a salad bowl, adding canned peas. Season with a small amount of vegetable oil. If necessary, add salt and ground pepper to taste.

That’s it, the salad is ready, but it’s better to let it sit in the refrigerator for a while, so its taste will become more intense. Just before serving, stir again and lightly garnish with finely chopped dill, parsley or green onions.
