Corn Cottage Cheese Casserole

Casserole with cottage cheese and corn flour

It would seem like nothing new, just another cottage cheese casserole. In fact, this is what it is, only this does not include either wheat flour or semolina, they are replaced by corn flour.

Cornmeal gives the casserole a whole new taste and smell. This casserole is also healthier than the classic one. And children really like the yellowish color that corn gives.

To prepare the casserole you will need:

  • Corn flour – 150 g;
  • Cottage cheese of any fat content – 600 g;
  • Egg – 4 large pieces;
  • Baking powder for dough – 0.5 teaspoon;
  • Vanillin - to taste;
  • Sugar - to taste;
  • Salt - on the tip of the knife;
  • Vegetable oil - for greasing the mold.

Let's start cooking:

  1. You should start cooking with cottage cheese. You can use any fat content; I prefer to use full-fat homemade cottage cheese from the market. Often I take not even 600 g, but a little more. Pour the cottage cheese into a bowl for preparing the casserole, remembering it with a fork if it is large.
  2. Add sugar to your taste, and add salt, mix the cottage cheese and sugar well.
  3. Now break the eggs into the cottage cheese and mix everything well.
  4. Then add baking powder and vanilla, mix everything again.
  5. Add all the corn flour to the cottage cheese, mix everything thoroughly until smooth. The flour should combine well with the cottage cheese, there should be no lumps.
  6. Take the form in which you will bake it, the size and shape are not important, you can even bake it in a frying pan. Lubricate it well with vegetable oil, you can also grease it with margarine, but grease it generously.
  7. Place the casserole dish in the oven, preheated to 180°, bake for 40-50 minutes.
  8. Then remove from the oven and let it cool, only then shake it out of the mold or simply cut it into pieces directly in the mold.

Great( 7 ) Badly( 0 )

Pie is another option for successfully using such flour. I’ll say right away - the recipe can be transformed if desired to get sweet pastries! You just need to remove ingredients such as onions and carrots and use sugar instead. How many? To your taste!

However, I would recommend trying the unsweetened version. It seems to me that it is much more interesting... By the way, you can also experiment with additives. I chose onions because we love them and I put them in all my savory dishes! And I used carrots not for taste, but for beauty :) In my opinion, the bright orange inclusions in the dough awaken an even greater appetite!

As for cornmeal, I love it! Healthy, satisfying, tasty... If this is your first experience with its participation, and you are not sure of your love for it :), then you can take it in a 1:1 ratio with premium wheat flour.

Well, shall we try? 😉

Ingredients:

  • corn flour - 300 g
  • milk - 400 ml
  • refined sunflower oil - 100 ml
  • unrefined sunflower oil - 5 tbsp.
  • eggs - 4 pcs.
  • onion - 2 pcs.
  • carrots - 1 pc.
  • salt - 0.75 tsp.
  • lemon pepper - 0.5 tsp.
  • pepper mixture - a pinch
  • allspice - 3 peas
  • bay leaf - 1 pc.
  • soda - 1 tsp.
  • starch - 2 tsp.

Preparation:

The dough for this pie can be called choux, since it is prepared first on the stove, just like for eclairs... Yum-yum! But about eclairs later))

So, I immediately sifted the cornmeal into the pan.

I poured in milk and sunflower oil.
My milk is regular, store-bought, 2.5% fat. And I took refined oil, since there is quite a lot of it in the dough.

She mixed the mixture and put it on the fire - at first on high, and when the contents of the saucepan got hot, she turned it down almost to a minimum.
I stirred the mixture with a spoon so that it did not burn.

Boil until thickened.
It is important that the mass is not too liquid or too thick. The consistency should resemble semolina or corn porridge.
Also, don’t be afraid of lumps! At this stage they are natural. But then we can easily get rid of them! ;)

I transferred the thick dough into a container convenient for kneading. Let it cool to room temperature.

In the meantime, I started working on the onions - I sautéed them in unrefined sunflower oil (you can use refined oil if you wish), adding salt, a mixture of black, white, green and pink peppers, as well as lemon.

I grated the carrots coarsely and added them to the onions.

Fry for 5-7 minutes, adding allspice and bay leaf.
Turned off the gas and let the vegetables cool slightly.

She returned to the test herself.
Break one egg into the mass that has cooled to room temperature.
Using the whisk attachment of a blender, beat it (you can use a mixer).

So I introduced each subsequent egg one at a time.

Now I added baking soda and potato starch.

Beat it thoroughly again. The result was a homogeneous dough - not a trace of lumps remained! ;)

Placed the sautéed vegetables into the dough.

Mixed with a spoon.

Place the dough in a greased 30 x 22 cm pan.

I baked it at 180-200°C for about 45 minutes. I checked the doneness with a wooden skewer.

That's it! A hearty and delicious pie is ready! ;)
We ate it simply with tea, with soup, and with salad! :)

How to make cornmeal pie: recipe with photos (step by step)

You can quickly bake a delicious and aromatic dessert in the oven. This pie consists of pumpkin dough, apple slices and caramel sauce. Therefore, the process of its preparation can be divided into several stages.

Step. No. 1. The first step is to create caramel. To do this, pour fifty grams of sugar into a saucepan and place it on the stove. When the sweet grains have completely melted and acquired a beautiful amber hue, add cream to the bowl and gently stir until smooth.

Step No. 2. The caramel prepared using this method is poured onto the bottom of a mold lined with parchment. Peeled and cut into thin slices apples are placed on top and put aside.

Step #3: Now it’s time to start testing. The pumpkin is cut into small pieces and crushed using a blender. Ground cinnamon, a raw egg and forty grams of granulated sugar are added to the resulting puree. Beat everything well again and then combine with baking powder and corn flour. At the final stage, vegetable oil is poured into the dough and mixed.

Step No. 4. The resulting homogeneous mass, reminiscent of thick sour cream, is laid on top of the apples. Immediately after this, the pan with the future pie is placed in the oven. Bake the dessert at two hundred degrees for about half an hour.

Step No. 4. Then remove it from the oven, cool it a little, remove it from the mold, turn it over so that the caramel layer is at the top, and serve it with tea.

  18. Take it out and serve hot.

Corn muffins with sausages and hard cheese

These muffins are perfect for snacking at any time of the day. They are good for breakfast, lunch or dinner. They are ideal for taking with you on the go. My children often take this delicacy to school and for outings. Even on holidays, they are great to serve to guests.

To make cupcakes you will need:

  • Corn flour – 2 cups (250 g each);
  • Butter – 100 g;
  • Sugar – 2 tablespoons;
  • Salt – 0.5 teaspoon;
  • Egg – 2 pieces;
  • Kefir – 250 ml;
  • Baking powder for dough – 1 teaspoon;
  • “Dutch” cheese – 150 g;
  • Sausages – 7 pieces.

Let's start cooking:

  1. To prepare, take a container in which it will be convenient to prepare the dough.
  2. Pour all the kefir into a bowl.
  3. Add sugar and salt to kefir and mix.
  4. Break the eggs into the kefir and mix everything with a whisk.
  5. Melt the butter until liquid, pour the melted butter into the kefir. Stir.
  6. Then mix flour with baking powder.
  7. Gradually add flour to the kefir mass, knead the dough well. There should be no lumps.
  8. Then take the sausages and peel them from the packaging. Cut the sausages into small cubes.
  9. Add the chopped sausages to the dough and mix well.
  10. Then grate the cheese on a coarse grater and pour it into the dough.
  11. Mix the dough well so that all the ingredients are well mixed, pay special attention to how the cheese spreads in the dough, it may stick together in lumps. I usually rub a little at a time into the dough and mix constantly.
  12. Then take cupcake pans, you can use disposable paper ones. Grease the molds with a little vegetable oil.
  13. Fill the molds with dough a little more than halfway; you should not pour more, because the dough will rise well and may go beyond the edges of the mold.
  14. Place the molds on a baking sheet. Place the baking sheet with the molds in the oven, preheated to 180°, bake the cupcakes until golden brown.
  15. Be sure to check readiness with a toothpick. I don’t indicate the baking time because everyone’s pans are different sizes and therefore the baking time is always different. (I use standard sized iron pans. Cupcakes this size usually take about 25-30 minutes to bake).
  16. Gently shake the finished cupcakes out of the pan. If you used disposable ones, then of course you don’t need to do this.

It is best to serve the muffins hot, but they are also quite tasty cold.
